My recent favorite quick breakfast has been this beautiful and satisfying smoothie. It's easy to throw together before heading to the studio at 6am and keeps me full until lunchtime.
Blueberry Breakfast Tart - serves 2
2 1/4 C unsweetened almond milk, hemp or rice milk
1/3 C (45g) raw unsalted cashews
1/3 C (30g) rolled oats
2 Tbsp pure maple syrup (optional)
1 Tbsp chia seeds
1/2 tsp ground cinnamon
2 C (320g) frozen blueberries
Combine the milk, cashews, and oats in the blender and blend on high for 30-60 seconds, until creamy. Add the remaining ingredients and blend again on high until smooth.
Consider adding any or all of these extras:
1 Tbsp maqui powder
1 Tbsp ground flaxseeds
1 tsp coconut oil
